The only way to properly celebrate Pi Day (March 14th)!

My nerdiness really knows no bounds. Truly, the only way to properly celebrate Pi Day is to bake some little hand pies to spread the nerdy love.

Nerdy Apple Hand Pies
Prep Time: 2 hours, 45 minutes
Cook Time: 30 minutes
Total Time: 3 hours, 15 minutes
Yield: 10-12 3.5-inch hand pies
Ingredients
2 pie crusts (store bought or homemade)
3 medium apples, peeled and diced into small bite-size pieces (about 2 and 1/2 cups diced)
1/3 cup granulated sugar
2 Tbs unsalted butter
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground allspice
Egg wash: 1 large egg beaten with 1 Tbs milk
Directions
Combine the filling ingredients diced apples, granulated sugar, butter, cinnamon, nutmeg, and allspice together in a medium saucepan over low-medium heat and bring to a simmer. Allow to simmer for 2 minutes. Remove from heat and allow to cool uncovered at room temperature for around 30 minutes.
Roll out the pie dough until it’s about 12 inches in diameter. Using a biscuit cutter (or cutting with a knife around a good sized glass) cut the dough into circles. Re-roll any scraps and cut into circles. Cut as many circles as you can just make sure you have an even amount so you can match tops and bottoms of your pies.
With your extra bits of dough cut your decoration. You can create any shape you want but I highly recommend little Pi symbols!
Meanwhile, preheat oven to 375°F and line two large baking sheets with parchment paper or silicone baking mats.
Arrange half of the circles on the prepared baking sheets. Place about 2 Tbs of filling in the center of each bottom crust.
With your remaining "top" pieces cut slits that will help vent steam. Place your decoration on top of the top piece.
Place top crust on top and press your fingers all around the edges to seal, and then crimp with a fork. Lightly brush the top of the pie crust with egg wash mixture.
Bake 28-32 minutes or until your pies are golden brown on top and around the edges. Remove from the oven and allow the hand pies to cool on a wire rack to cool until ready to handle.
