Copycat White Castle Sliders

I swear that we do sometimes eat vegetables in my house but those recipes just aren't as exciting to share as the fast food copy cat ones. This copycat recipe was, honestly, a little more labor intensive than I expected but seriously worth it in the end!

We used our 36" outdoor flattop griddle to cook these (which makes it a much faster process when you're making a large batch) but these could absolutely be done in a large flat skillet or small indoor griddle.

Servings: About 12 sliders

Active Time: 60 minutes (these do need to freeze overnight)

INGREDIENTS:

1 lb. ground beef

1/2 of a medium white onion, diced small

Dill pickle chips

1 package of King's Hawaiian buns

Special Hardware:

Rolling pin

Parchment paper

DIRECTIONS:

  1. The night before you want to have your sliders you will need to prep the meat. Start this by laying a large piece of parchment paper on your counter and place the ground beef on top, smooshing it into as much of a rectangle as you can.

  2. Place a second sheet of parchment on top of your beef and, using your rolling pin, roll the meat out until it is the approximate dimensions of your King's Hawaiian bun loaf.

  3. Once the meat is to the correct size (you can always trim the edges off if it gets a bit too wide) score the meat, but do not cut all the way through, into smaller patties. The idea here is that you will have one large rectangle of ground beef that is scored to the correct size of your buns when you separate it into individual patties.

  4. If you want to be super authentic you can then use a chopstick, or other small round object, to make 5 holes (resembling the 5 dots on a dice) in each individual patty. This way you will create the iconic White Castle patty steam!

  5. Place your rectangle on a baking sheet and place in the freezer overnight, or for at least a few hours.

  6. When you're ready to cook, remove your patty from the freezer and break the large rectangle into the smaller patties.

  7. Dice the onions and cut the bun loaf in half to create your tops and bottoms.

  8. Heat a large skillet (or whatever cooking device you're using) over medium.

  9. Add a small amount of oil to the pan and spread the diced onions in an even layer and let them steam for about 5 minutes.

  10. Place your separated patties on top of the onions along with the bottom portion of each bun placed on each patty square. The holes in the patties will allow for faster cooking and steam to rise up to the bottom bun.

  11. Cook the patties until well done (about 5 - 10 minutes) and use a wide spatula to scoop, and flip over, your onions, hamburger patty, and bottom bun.

  12. Top each hamburger with one pickle chip and the top bun.

  13. If you want to be extra like me...feel free to cut off a portion of the bun box to fold into a burger holder. Definitely adds to the charm but isn't necessary!

  14. Serve with onion chips or fries and enjoy!
