Croque Madame Croissant

A riff on the decadent classic with even more delicious French flavors!

Thinking about treating yourself to a nice brunch this weekend but don’t want to go out? Then this croque madame croissant is perfect for you! It comes together pretty easily but is incredibly decadent! I recommend serving it with a mimosa sunrise to make it feel ✨fancy✨


Croc Madame Croissant

  • Prep Time: 30 minutes

  • Cook Time: 15 minutes

  • Total Time: 45 minutes

  • Yield: 4 croissants


Ingredients

  • 2 Tbs salted butter

  • 2 Tbs all purpose flour

  • 1 Tbs Dijon mustard

  • 1 cup skim milk

  • Salt & black pepper

  • 3/4 cup gruyere, shredded

  • 1/4 cup parmesan, shredded

  • 4 swiss cheese slices

  • 1 package of sliced prosciutto

  • 4 eggs

  • 4 large croissants

  • Chives, thinly sliced


Directions

  1. Cook the prosciutto slices on the stovetop over low heat until crispy. Set aside.

  2. Make the béchamel sauce - Heat a medium saucepan and melt the butter. Once melted, add flour and cook for 2-3 minutes before adding milk, mustard, and salt & pepper whisking continuously for another 1-2 minutes.

  3. Add both cheeses to the pan and stir occasionally until your béchamel sauce has thickened. Set aside to cool.

  4. While the sauce is coming together, cut the croissants in half and toast them. If you have a large enough toaster you can easily do this in there or in a pan on the stove.

  5. Meanwhile, add the eggs to a nonstick skillet heated over medium low heat. Cook the eggs sunny side up until your desired doneness but try to keep the yoke runny.

  6. To assemble - Place the bottom half of the croissant on a plate and top with a slice of swiss cheese, then a slice or two of prosciutto, and about a 1/4 cup of the béchamel sauce. Gently top that with the cooked egg.

  7. Balance the other half of the croissant against the bottom half and generously cover with another 1/4 cup of sauce.

  8. Garnish with chives and serve!
