Breakfast Quesadillas

This recipe was inspired by Patterson's Cafe in Oxford, Ohio. One of the best places in my old college town! I would ALWAYS get the breakfast quesadillas and would usually end up taking half of it home because it was such a large portion. These are my version of the old favorite. We made them on Dad's flattop griddle but could easily be done in a large skillet on the stovetop.


This recipe will make 2 quesadillas and can easily be cut in half or doubled based on your needs. Any of the special "add-ins" can also be modified based on your preference and this can definitely be a great vegetarian option too if you exclude the sausage or bacon.

 

INGREDIENTS:

Filling:

  • 4 eggs, beaten

  • 2 sausage patties, cooked and diced

  • 1/4 cup green peppers, diced

  • 1/4 cup onion (use green, yellow, or purple, your preference), diced

  • 1/4 cup tomatoes, diced

  • 1 cup Mexican blend shredded cheese

  • Additional delicious options: jalapeño, mushrooms, bacon, pepper jack cheese

Assembly:

  • 4 large tortillas

  • 2 tablespoons canola oil


DIRECTIONS:

  1. Cook the sausage patties according to package directions.

  2. Cook the eggs until they are a large scramble. Add your other desired ingredients (everything except for the cheese) to the eggs and have them cook together. This will help keep things together and from getting too messy when you flip the quesadillas.

  3. Once the eggs are cooked, remove from the pan and set aside.

  4. Place a small amount of oil into your pan and distribute around the pan.

  5. Place one tortilla in your pan and cover with a quarter of your shredded cheese. Top with half of your egg mixture and cover with another quarter of your cheese. Then top loaded base tortilla with a second tortilla.

  6. Once the bottom tortilla is brown and crispy, using a large spatula, flip your quesadilla.

  7. Crisp the second side and remove from the pan to a large cutting board. Repeat these steps for the second quesadilla.

  8. Using a knife, or pizza cutter, cut into 4 equal pieces and enjoy!

  9. Serve with some sour cream, hot sauce, and/or homemade guacamole.

If you have any leftovers, reheat in a skillet or oven for a couple of minutes and it will be perfect!
