Hummus is one of my all time favorite snacks. It's yummy, pretty healthy, and totally customizable.
Servings: Makes about 3 cups worth
Time: About 45 minutes (excluding the roasting, less than 10 minutes)
INGREDIENTS:
Roasted Garlic:
1 head of garlic
Olive oil
Hummus:
1 (15 ounce) can chickpeas, rinsed and drained
1/3 cup tahini
About 4 Tbs cold water, or more if needed
2 Tbs extra virgin olive oil
3/4 tsp salt
juice of 1 lemon
Roasted garlic
DIRECTIONS:
Preheat oven to 400F.
Remove the outermost papery layer of the garlic head and cut about a quarter of an inch off the top of the head. You want to expose the cloves themselves so you may need to cut off a little more, use your best judgement.
Drizzle olive oil over the blub and place on a piece of foil.
Wrap the foil around the bulb and place in the oven (feel free to use a baking sheet but it's not really needed).
Bake for 30 - 40 minutes.
Remove from the oven and let cool.
Dump all of the ingredients in a food processor. You should be able to squeeze the garlic cloves out or you can also use a fork to remove them.
Pulse until everything is smooth and creamy.
If the mixture is still too thick add more olive oil or water until you reach your desired consistency.
Store in an airtight container and top with some extra oil and a sprinkling of paprika and parsley.
